I love literary fiction, but in these pandemic days I'm almost exclusively reading fantasy. Most exciting are the slew of books which have come out recently that are not based in the classic European medieval mode. (As much as I love The Lord of the Rings and enjoyed Game of Thrones, it's refreshing to read something different!) A few I've particularly enjoyed:
Black Sun, by Rebecca Roanhorse, based on Aztec and Mayan myths.
The Daevebad Trilogy, by SA Chakraborty, based on Egyptian and Arabic stories.
The Winternight Trilogy, by Katherine Arden, based on Russian fairy tales.
The Broken Earth Trilogy, by NK Jemisin, a futuristic, post-apocalyptic fantasy.
